Apart from being great builders, the Mughals were also known as great
food connoisseurs. Almost every Mughal emperor has passed on his
personal recipe as he moved along the passage of time, which is known
as Mughlai food. This is why, perhaps, the influence of the Mughals is
most felt in their food.
Several of India's famous meat dishes have come from the kitchen of
the Mughals. Apart from introducing the tandoor (earthen oven), used
to make rotis and kababs - which are pieces of meat marinated in
spices and skewered over a coal tandoor. Some of the famous Mughlai
dishes include tandoori chicken, seekh and boti kabab and even
tandoori fish.
And Agra being an important Mughal seat for long, it is natural for
the city of the Taj boosting to be the city serving the best Mughlai
cuisine. The superb Mughlai cuisine with its luscious sauces of milk,
curd, cream and crushed nuts is available in major hotels and
restaurants in Agra.
Any vacations in Agra are incomplete without savouring the Mughlai
cuisine that the city of Taj Mahal is also famous for. Apart from
trying out the Mughlai spread in the star hotels and restaurants, one
should also try out the small dhabas that dots the city. Some of them
serve even better fares than a regular five-star hotel.
Mughlai cuisine is the specialty of Agra. The food is typified by rich
cream-and-curd based sauces, succulent kebabs and unique breads such
as the naan and tandoori paranthas roasted in earthen ovens.
